Simple and Tasty....Southwest Chicken Chili

I just LOVE a good, healthy, and tasty meal.  But even more than that, I love a meal that is easy to prepare which makes me a huge fan of my friend, The Crock Pot!  One of the fiance’s favorite meals is southwest chicken chili so I thought I would look for an easier recipe than the way I usually make it.  I found a great Crock Pot recipe on Pinterest for chicken tortilla soup to satisfy his taste buds and made some alterations to make one great southwest chicken chili!  Seriously, this is super good and SO easy :)

*Changes I made to the recipe are as follows:  I used chopped rotisserie chicken, no kidney beans, sour cream, or cilantro.  I used a taco-seasoning package instead of the 4 spices she lists in her recipe, and I added a teaspoon of red pepper flakes along with a dash of chili powder.
Step one:
My ingredients
Gather needed ingredients.  2 cups chopped chicken, 2 10 oz cans of Ro-Tel (I used HOT and regular), 2 cans of black beans (rinsed and drained), 1 can of sweet corn, 1 chopped white onion, chicken broth-approx., 2 cups, and taco seasoning package. Ingredients for later: Teaspoon of red pepper flakes, a dash of chili powder, tortilla chips, and Mexican cheese!
Step two:
Ingredients added to the Crock Pot
Toss all the ingredients (except the cooked chopped rotisserie chicken, teaspoon of red pepper flakes, a dash of chili powder, tortilla chips, and Mexican cheese,) along with 1-2 cups of water- use more or less depending on the consistency you want.  For example- if you want to keep this close to the original recipe and make soup, use more water and if you want to make chili like I did, use less water- It’s that easy :)
Step three:
I set mine on HIGH for 6 hours
Set your Crock Pot to HIGH and cook for 6-7 hours or LOW and cook for 8-9 hours
Step four:
Chopped cooked rotisserie chicken
After about 4 ½ hours add in your cooked chopped rotisserie chicken, teaspoon of red pepper flakes and a dash of chili powder
To serve:
All finished!!
Crumble some tortilla chips in the bottom of your bowl, toss some Mexican cheese on the top and any other fixings you like, and voila!  A hearty, healthy, easy, and tasty meal sure to please even the pickiest eater- the fianc√© and I are pretty picky eaters by the way.   This is also a great recipe for beginning cooks out there who aren’t really sure where to start.  I say, when in doubt- give the Crock Pot a shout!

FYI- I have a very old crock pot and they all cook differently, so you may need to use more or less water to get your desired consistency.
