Recipe.....SWEET Potato Pie!

I don't know about the rest of you, but sweet potato pie has been a holiday tradition in my family since I was a little bit.  I really miss my Grandma's pies now that I live away from most of my family here in good old Texas.  She used to make extra pies so I have my very own to take back to college with me when I would come home for the holidays!  This year I  broke down and called my Grandma for the recipe and took a try and recreating her famous pies on my own.   I decided to share Grandma's super simple recipe with you!  Please note, I am a baking rookie so I used frozen pie crusts but you are more than free to substitute those is you know how or have time to make them from scratch.

Grandma's Sweet Potato Pie
Serving Size= 4 Pies

First, gather the necessary ingredients.

4 sweet potatoes
4 pie frozen crusts
2 sticks of butter
2 eggs
1 cup of sugar
Mashing tool
Large mixing bowl

Second, bring a large pot of water to a boil and add the 4 sweet potatoes.  Leave the sweet potatoes boiling until the are good and tender!

Third, remove the boiled sweet potatoes from the water and remove the skin.  Once the skin in removed, add the sweet potatoes to your large mixing bowl.

Fourth, preheat your oven to 350 degrees and remove your pies crusts from the package.

Fifth, using your mashing tool, begin to mash up the sweet potatoes and remove all lumps.

Sixth, add your sugar, butter, eggs, and nutmeg to taste and continue mashing until all the ingredients are blended and the sweet potatoes are good and smooth.

Next, pour the mixture evenly between the 4 pie crusts and smooth evenly with a large spoon. I sprinkled a little nutmeg on top for garnishing but you don't have to :)

Bake the pies until the crust is nice and brown- around 30-35 minutes.

Remove the pies from the oven and allow them to cool. 

That's it!  Top with Blue Bell Vanilla Bean Ice Cream for a to-die for holiday treat!
