Recipe- Garlic Roasted Chicken!

In the near future, my blog will be limited on recipes that are focused around meat since I am going to give the switch to a plant-based diet a serious go but I still want to share with you all some of my classic, favorite, meat-centered recipes :)

This recipe is one that you are bound to love.  Quick, easy, and packed with flavor, this simple chicken dish will be a hit at your dinner table.  This recipe was inspired by a pin that is on my Oh how I love food board on Pinterest from Add a Pinch.   She has some great recipes!

Cook time: 25 min
Serves: 6


1 lb. organic chicken legs (5-6)
6 cloves of garlic
Olive Oil
Fresh thyme

Start by finely chopping up half of the garlic (3 cloves).  Garlic is a staple ingredient in my kitchen- I just LOVE it!  You will also want to pre-wash you chicken, season with salt and pepper to taste, and set it aside.
Next, you will want to coat a medium- sized skillet with olive oil.  On medium heat, allow your garlic to simmer in the olive oil for a few minutes. 
Now, add your chicken legs. Note: This is the step that is going to make your chicken knock your socks off with flavor!  It makes it juicy while adding a nice, crispy layer before you finish it off in the oven.
Allow the chicken legs to brown on each side.  This should take approx. 10 minutes.  Add a few dashes of paprika while the chicken is in the last stages of browning.  Go ahead and pre-heat your oven to 475 degrees.
The chicken should look like this when the 10 minutes has passed. 
Spray a glass pan with olive oil spray to avoid the chicken from sticking and transfer your chicken legs to the pan.  Add the other 3 garlic cloves to the pan and top the chicken with a few more dashes of paprika and several twigs of fresh thyme.
Place the pan in the oven and allow to roast for about 15 more minutes.  When you remove the chicken, it should look something like this!
The chicken will fall off the bones and will have your taste bugs screaming for seconds.  This dish has become a regular in my house because the hubby licks his bones and always goes back for seconds which means it's a winner! 
This recipe can be altered to any cut of chicken you prefer.  I have also made it before using organic chicken thighs which is closer to the recipe listed on Add a Pinch.  Any cut you choose, this chicken is oh soooo good!
